Las empanadas de pipián son un sabroso plato de Colombia que se prepara con ingredientes autóctonos. El maíz es el ingrediente rey, junto con la patata y los cacahuetes.

Pipián empanadas are a tasty dish from Colombia that is prepared with local ingredients. Corn is the king ingredient, along with potato and peanuts.

Ingredientes

Pipián
500 gr masa de maíz añejo (500 gr old corn dough) Mantequería Alejandro Rodriguez
1 kg de papa colorada pelada y picada (1 kg red potato, peeled and chopped) Frutería Torijano
250 gr de maní tostado y molido (250 gr roasted and ground peanuts)
250 gr cebolla larga finamente picada (250 gr long onion finely chopped) El huerto de Clarita
5 dientes de ajo machacados (5 garlic cloves, crushed)  Fruteria Torijano
250 gr tomate chonto maduro (250 gr ripe chonto tomato) El huerto de clarita
1 cucharada de comino molido (1 tablespoon ground cumin) Mantequería Alejandro Rodriguez
1 cucharada pimienta molida (1 tablespoon ground pepper)    Mantequería Alejandro Rodriguez
2 cucharadas de achiote diluido (2 tablespoons of achiote diluted) (merc.maravilas) productos latinos jazmin
Agua (Water)
Aceite vegetal (Vegetable oil)
Ají de piña
½ piña madura. (½ ripe pineapple) Frutería y zumería Peña
1 cebolla cabezona. (1 big onion)  El huerto de Clarita
5 gr Ají pajarito o chivato al gusto. (5 gr Ají pajarito or chivato to taste) (merc de la paz) La boulette
15 gr cilantro (15 gr parsley) Mantequería Alejandro Rodriguez
5 gr sal (5 gr salt)
5 gr azúcar (5 gr sugar)
10 ml vinagre (10 ml vinegar)

Preparación

El pipián:

  1. En una olla agregar la cebolla, el tomate, achiote diluido y el ajo, sofreír con el aceite durante 5 min hasta nacrar todos los ingredientes.
  2. Agregar la papa, dejar el fuego al mínimo y comenzar a poner de a poco el agua
  3. Remover constantemente con cuchara de palo para evitar que se pegue al fondo de la olla
  4. Una vez cocida la papa se retira una taza del líquido de cocción y en él se diluye el maní tostado
  5. Agrega a la mezcla y cocina hasta obtener una textura homogénea y lisa.

Las empanadas:

  1. Hacer bolitas de 2.5 a 3 cm de diámetro y ponerlas sobre una lámina de plástico o un trozo de hoja de plátano, previamente engrasada.
  2. Aplanar con el fin de obtener discos de masa de aproximadamente 8 a 10 cm de diá
  3. En el centro poner la cantidad de pipián necesaria.
  4. Doblar el disco a la mitad para obtener la forma tradicional de la empanada.

Ají de piña:

  1. Picar finamente el ají, el cilantro y perejil.
  2. Por otro lado pelar y picar la piña en cubos pequeños.
  3. Mezclar todos los ingredientes y dejarlos reposar para que maceren.

 

The pipián

  1. In a saucepan add the onion, tomato, diluted achiote and garlic, fry with the oil for 5 min until all the ingredients are born.
  2. Add the potato, leave the heat to a minimum and start adding the water little by little
  3. Stir constantly with a wooden spoon to prevent it from sticking to the bottom of the pot
  4. Once the potato is cooked, a cup of the cooking liquid is removed and the roasted peanuts are diluted in it
  5. Add to the mixture and cook until you get a homogeneous and smooth texture.

The empanadas

  1. Make balls of 2.5 to 3 cm in diameter and put them on a plastic sheet or a piece of banana leaf, previously greased.
  2. Flatten in order to obtain dough discs approximately 8-10 cm in diameter.
  3. In the center put the necessary amount of pipián.
  4. Fold the disc in half to obtain the traditional pie shape.

Ají de piña

  1. Finely chop the chili, coriander and parsley.
  2. On the other hand, peel and chop the pineapple into small cubes.
  3. Mix all the ingredients and let them rest to marinate.
