Trucha de río a la andorrana

Es un plato de verano en el que no puede faltar el jamón, ya que el aceite que desprende al cocinar aporta un toque muy sabroso.

Ingredientes

6 truchas de río (6 river trout) Pescadería Ballesteros
12 lonchas de jamón serrano graso (12 slides of fatty cured ham) Carnicería Mantecón
harina (Flour)
aceite (Oil)
sal y pimienta (Salt and pepper)

Preparación

Lavar las truchas de río con agua fría y secarlas bien. Salpimentar por dentro y por fuera y rebozar con un poco de harina. En una sartén con aceite, freír el jamón cortado a tiras o en lonchas, hasta que esté bien crujiente o al gusto. Una vez frito, retirar de la sartén y reservar en un plato para que escurra el exceso de aceite.

Wash the river trout well in cold water and dry them well. Season them inside and out with salt and pepper and flour lightly. Cut the cured ham into strips or slices, then fry them in a pan with oil until crispy or to taste. Once the ham is fried, remove it from the pan to drain on a plate.

En la misma sartén y con el mismo aceite, freír las truchas hasta que estén doradas por fuera y cocidas por dentro. Servirlas acompañadas con los trozos de jamón y rociadas con el aceite que haya quedado en la sartén.

In the same pan with the same oil, fry the trout until they are golden on the outside and cooked on the inside. Serve them with the ham pieces and sprinkle with the oil from the pan.
