Ingredientes

Para llevar a cabo la siguiente receta, los ingredientes los puedes encontrar en el Mercado de Vicálvaro:

4 buenos rejos de pulpo (4 good octopus rejos) Pescadería De jesus
1 cabeza de ajos (1 head of garlic) Frutas Selectas Alicia
1 cebolla (1 onion) Frutas y verduras Antonio
12 patatas pequeñas (12 small potatoes) Frutas selectas Alicia
2 hojas de laurel (2 bay leaves) Gourmet Vicálvaro
Sal y pimienta blanca (Salt and white pepper)
Perejil (Parsley)
Aceite de oliva virgen extra (Extra virgin olive oil)
Opcional: Pimentón dulce (Optional: Sweet paprika)

Preparación

  1. Lo primero que tenemos que hacer es cocer bien el pulpo. En este caso, como usaremos solo los rejos, disminuimos un poco el tiempo de cocción y vamos pinchando para ver si están tiernos. Para ello, puedes seguir los consejos que te damos en nuestra entrada sobre cómo cocer bien el pulpo.
  2. Mientras cocemos el pulpo, vamos precalentando el horno a 160 Co.
  3. Podemos ir metiendo en el horno las patatas embadurnadas en sal y con un chorrito de aceite por encima, pero si son de las pequeñitas, no será necesario, porque se harán al mismo tiempo cuando horneemos el pulpo.
  4. Una vez que el pulpo esté tierno, lo ponemos en una bandeja que tenga fondo y que pueda ir al horno. Lo ponemos junto con las patatas. Por encima del pulpo ponemos los dientes de ajo machacados, un par de hojas de laurel troceadas, y la cebolla cortada a rodajas finas. También se puede poner unas tiras de pimiento rojo. Espolvoreamos con sal y pimienta y regamos con más aceite de oliva.
  5. Horneamos el pulpo 15 minutos y después subimos la temperatura a 180ºC otros 10 minutos para que el conjunto dore un poco.
  6. Servimos el pulpo a lagareiro espolvoreado con cilantro picado (puedes usar perejil), y lo regamos con los líquidos de la cocción en el horno. Nuestro consejo de la casa: Un golpe de pimentón sobre el pulpo y las patatas al momento de servir.

  2. While we cook the octopus, we are preheating the oven to 160 C.
  3. We can put the potatoes covered in salt in the oven and with a drizzle of oil on top, but if they are one of the little ones, it will not be necessary, because it will be done at the same time when we bake the octopus.
  4. Once the octopus is tender, we put it on a tray that has a bottom and can be baked. We put it together with the potatoes. On top of the octopus, we put the crushed garlic cloves, a couple of chopped bay leaves, and the onion cut into thin slices. You can also put some strips of red pepper. Sprinkle with salt and pepper and sprinkle with more olive oil.
  5. Bake the octopus for 15 minutes and then raise the temperature to 180ºC for another 10 minutes so that the whole browns a little.
  6. We serve the octopus a lagareiro sprinkled with chopped coriander (you can use parsley), and we water it with the cooking liquids in the oven. Our house tip: A hit of paprika on the octopus and potatoes when serving.
