Ingredientes

Puedes conseguir estos ingredientes en el Mercado de San Antón

400 g de conejo (400 g of rabbit) Carnicería Lalo
400 g pollo cortado (400 g chicken cut) La finca de jimenez barbero
1 dl de aceite de oliva virgen extra (1 dl of extra virgin olive oil) Oleoteca Murua
150 g de garrofón tierno (judía de lima) (150 g lima beans) La flor de San anton
250 g de ferradura (judías verdes autóctonas) (250 g of native green beans) La flor de San anton
100 g de tomates maduros (100 g of ripe tomatoes) 4 hojas
300 g de arroz bomba (300 g of Bomba rice) Supercor
1 cucharadita de pimentón dulce (1 teaspoon of sweet paprika) Puturru de foie
1 pellizco de azafrán en hebra (1 pinch of saffron thread) Oleoteca Murua
Sal (Salt)

 

Preparación

  1. Cortar en trozos pequeños el conejo y el pollo. Calentar el aceite en la paella. Dorar el conejo y el pollo por todos los lados. Sazonar con sal. Incorporar el garrofón y las judías verdes troceadas. Continuar la cocción durante 10 min.
  2. Bajar el fuego, e incorporar el tomate rallado. Remover durante 2 min. para que suelte su agua. Agregar el pimentón, las hebras de azafrán y 1,5 l de agua. Salar. Cocer a fuego vivo durante 5 min.
  3. Bajar el fuego y continuar la cocción de 30 a 35 min. o hasta que todos los ingredientes estén cocidos. El nivel del caldo tiene que quedar a la altura de los remaches internos de la paella.
  4. Llevar a ebullición a fuego vivo, agregar el arroz y cocerlo durante 10 min. Bajar el fuego y continuar la cocción de 8 a 10 min. El arroz tiene que quedar seco y con el grano entero.
  5. Reposar durante 5 min. antes de servir. Servir en la misma paella

  2. Lower the heat, and add the grated tomato. Stir for 2 minutes to release its water. Add the paprika, the saffron threads and 1.5 l of water. To Salt. Cook over high heat for 5 min.
  3. Lower the heat and continue cooking for 30 to 35 min. or until all ingredients are cooked. The level of the broth must be at the level of the internal rivets of the paella.
  4. Bring to a boil over high heat, add the rice and cook for 10 min. Lower the heat and continue cooking for 8 to 10 min. The rice has to be dry and with the whole grain.
  5. Let it rest for 5 min. before serving. Serve in the same paella.
