El Kak’ik o Kaq’ik guatemalteco es un plato típico de Alta Verapaz. Según las tradiciones, es una receta que debe ser acompañada por el tamalito blanco envuelto en hoja de plátano. Fue declarado Patrimonio Cultural Intangible por el Ministerio de Cultura y Deportes en 2007

La palabra Kak’ik es de origen maya y significa rojo y chile, por cada sílaba respectiva. Este platillo se sirve siempre con arroz para agregar al caldo y pequeños tamales de masa de maíz sazonados sin nada más que sal, que son llamados blancos o pochitos.

 

 

The Guatemalan Kak’ik or Kaq’ik is a typical dish from Alta Verapaz. According to the traditions, It is a recipe that should be accompanied by the white tamale wrapped in banana leaf. It was declared Intangible Cultural Heritage by the Ministry of Culture and Sports in 2007

The word Kak’ik is of Mayan origin and means red and chili, for each respective syllable. This dish is always served with rice to add to the broth and small masa tamales of corn seasoned with nothing but salt, which is called white or pochitos.

  • 2 libras de pavo cortado en pedazos grandes
  • Media libra de tomate
  • 4 onzas de miltomate
  • 2 chiles guaques grandes
  • 1 chile pasa grande
  • 1 chile pimiento rojo grande
  • 6 dientes de ajo grandes
  • 1 cebolla mediana
  • 4 ramas de cilantro
  • 10 ramas de hierbabuena
  • Media onza de ajonjolí
  • 4 granos de pimienta gorda o pimienta de chapa
  • 4 a 5 granos de pimienta
  • 1 onza de pepitoria
  • Tallos de cebolla
  • Achiote
  • Sal
  • Chile cobanero en polvo

 

 

  • 2 pounds turkey cut into large pieces
  • Half a pound of tomato
  • 4 ounces of miltomate
  • 2 large guaque chilies
  • 1 chili pepper
  • 1 large red bell pepper
  • 6 large garlic cloves
  • 1 medium onion
  • 4 branches of coriander
  • 10 sprigs of mint
  • Half an ounce of sesame
  • 4 grains of allspice or allspice
  • 4 to 5 peppercorns
  • 1 ounce of petitory
  • Onion stalks
  • Achiote
  • Salt
  • Cobanero chili powder

Preparación

  1. Primero, cocemos el pavo con un poco de sal y un ramo hecho con tallos de cebolla, hierbabuena y cilantro en suficiente agua.
  2. Nos aseguramos de que el agua cubra la carne ya que habrá de hervir y una parte se consumirá.
  3. Para hacer el recado, primero doramos la pepitoria, el ajonjolí y los granos de pimienta.
  4. Asamos el chile pimiento, los chiles, ajo, cebolla, el tomate y el miltomate.
  5. Luego, licuamos en seco el recado y colarlo.
  6. Retiramos el ramo con el que se cocinó el pavo y agregamos el recado.
  7. Hervir durante 10 minutos y sazonar con un poco de sal, achiote y chile cobanero al gusto.
  8. Cuidar que el pavo no se recueza.
  9. Finalmente, servir en pedazos grandes con un poco de arroz, tortillas o tamalitos al gusto.
