1 kilo de habichuelas rojas (1 kilo of red beans) Mantequería la gloria
6 litros de agua (6 liters of water)
10 gramos de astillas de canela (10 grams cinnamon chips) Mantequería la gloria
15 unidades de clavo de especia (15 units clove spice) Mantequería la gloria
2 litros de leche entera (2 liters of whole milk) Delicatessen la ermita
2 litros de leche evaporada (2 liters of evaporated milk) Delicatessen la ermita
½ kilo de azúcar (½ kilo of sugar)
Sal marina (Sea salt)
1 kilo de batata (1 kilo of sweet potato) Frutas Rosarito
¼ kilo de pasas (¼ kilo of raisins) Ahorramas
Nuez moscada (Nutmeg) Mantequería la gloria
1 litro de leche de coco (1 liter of coconut milk)
50 gramos de mantequilla (50 grams of butter) Mantequería La Gloria
Galletas de leche (Milk cookies)

 

Preparación

  1. La noche anterior poner los granos en agua. Limpiar y lavar las habichuelas, ponerlas a ablandar con el agua con la canela y clavos; reservando tres tazas de agua. Luego que estén blandas, majarlas o licuarlas. Agregar agua reservada y las leches, pasar dos veces por colador fino.
  2. Agregar el azúcar y la sal. Poner a fuego alto hasta que hiervan, moviendo con cuchara de madera. Bajar el fuego a mediano y adicionar las batatas peladas picadas en pedazos pequeños. Cuando las batatas estén blandas, rociar con la nuez moscada y agregar la leche de coco. Dejar dos o tres minutos más al fuego.
  3. Al bajar del fuego debe agregar la mantequilla. Servir con casabe tostado o las galletas de leche.

 

  1. The night before put the grains in water. Clean and wash the beans, put them to soften with the water with the cinnamon and cloves; reserving three cups of water. After they are soft, mash or blend them. Add reserved water and the milk, pass through a fine sieve twice.
  2. Add the sugar and salt. Put over high heat until boiling, stirring with a wooden spoon. Lower the heat to medium and add the peeled sweet potatoes, chopped into small pieces. When the sweet potatoes are soft, drizzle with the nutmeg and add coconut milk. Leave two or three more minutes on the fire.
  3. When lowering the heat you must add the butter. Serve with toasted casabe or milk cookies.
