Ingredientes

  • ½ gallina (1200-1500 gramos aproximadamente)
  • 1 hoja de laurel
  • 1 cebolla
  • 3 dientes de ajo
  • 1kg de patata
  • 5-6 zanahorias
  • 400 gramos de guisantes
  • 3-4 manzanas
  • Mostaza y salsa Worcestershire al gusto
  • Sal y pimienta al gusto
  • Mayonesa al gusto (500g aproximadamente)

  • 1 onion
  • 3 garlic cloves
  • 1kg of potato
  • 5-6 carrots
  • 400 grams of peas
  • 3-4 apples
  • Mustard and Worcestershire sauce to taste
  • Salt and pepper to taste
  • Mayonnaise to taste (approximately 500g)

Preparación

  1. La gallina se cuece durante aproximadamente media hora en olla de presión, cubierta con agua y acompañada con el laurel, la cebolla y los ajos. Una vez blanda, se cuela el agua, se desecha la cebolla y el laurel y se deja enfriar. Se trituran los ajos y se desmenuza la carne de la gallina. Mezclamos ambos ingredientes.
  2. Se lavan las patatas y las zanahorias, y se ponen a cocer en agua con su piel durante unos 30 minutos, hasta que estén blandas. Se escurren, se dejan enfriar, se retiran las pieles y se corta todo en dados pequeños.
  3. Los guisantes se escurren. La manzana se lave, se pela y se corta en dados muy pequeños. La manzana aportará un punto fresco, ácido y a la vez crujiente al plato.
  4. En un bol grande añadimos la carne de la gallina desmenuzada, las patatas y zanahorias en dados pequeños, los guisantes escurridos y la manzana en dados muy pequeños. Se sazona con sal y pimienta. Se añade la salsa Worcestershire y la mostaza al gusto, en poca cantidad. Se mezcla todo muy bien para que se distribuyan todos los componentes de la ensaladilla y se empapen de las salsas. Por último, se añade la mayonesa y se mezcla bien nuevamente.
  5. Esta ensaladilla se come en frío, así que es importante dejar reposar en la nevera un par de horas. Para dar una presentación diferente a la tradicional, a la hora de emplatar, se sirve la ensaladilla con ayuda de una cuchara de helado o dos cucharas soperas, dando forma de bolas, y se “empareda” entre regañás de pan de cristal que aportan una textura crujiente al plato.

 

 

  1. The chicken is cooked for about half an hour in a pressure cooker, covered with water, and accompanied with bay leaf, onion, and garlic. Once soft, strain the water, discard the onion and bay leaf and let it cool. The garlic is crushed and the chicken meat is shredded. We mix both ingredients.
  2. The potatoes and carrots are washed, and cooked in water with their skin for about 30 minutes until they are soft. Drain, let cool, remove the skins and cut everything into small cubes.
  3. The peas drain. The apple is washed, peeled and cut into very small cubes. The apple will add a fresh, acidic and at the same time crunchy touch to the dish.
  4. In a large bowl add the shredded chicken meat, the potatoes and carrots in small cubes, the drained peas and the apple in very small cubes. Season with salt and pepper. Add the Worcestershire sauce and mustard to taste, sparingly. Everything is mixed very well so that all the components of the salad are distributed and soaked in the sauces. Finally, add the mayonnaise and mix well again.
  5. This salad is eaten cold, so it is important to let it rest in the fridge for a couple of hours. To give a different presentation to the traditional one, when serving, the salad is served with the help of an ice cream spoon or two soup spoons, shaping it into balls, and it is «sandwiched» between glass bread scolds that provide a crunchy texture to the plate.
