El encocao de langosta del archipiélago de San Blas es un plato típico de Panamá. El coco junto con la langosta son los dos ingredientes estrella.

Ingredientes

  • 1 pimiento rojo
  • 1 pimiento verde
  • 2 cebollas rojas
  • 1/4 manojo de culantro
  • 5 gr. Pimienta de Sechuan
  • 1 hoja de laurel
  • 500g de leche de coco
  • 250g de corvina
  • 2 hojas de lima kaffir
  • 600g langosta de San Blas
  • 0.15g de lecitina
  • 1 plátano macho

 

  • 1 red pepper
  • 1 green pepper
  • 2 red onions
  • 1/4 bunch cilantro
  • 5 gr. Sechuan pepper
  • 1 bay leaf
  • 500g coconut milk
  • 250g of croaker
  • 2 kaffir lime leaves
  • 600g San Blas lobster
  • 0.15g of lecithin
  • 1 plantain

Preparación

Cortamos las cebollas en juliana fina y pochamos en un sartén a fuego lento. Cortamos los pimientos en dados de unos 2 cm. Reservamos la mitad y la otra mitad juntamos con la cebolla. Dejamos pochar. Adherimos la pimienta de Sechuan, el culantro picado y el laurel al sofrito. Una vez que todo esté muy bien pochado, juntamos la corvina previamente cortada en dados y dejamos que el pescado se cueza. Colocamos agua hasta cubrir ligeramente lo que tenemos en la sartén y colocamos unos 400 ml. de leche de coco en la mezcla. Esperamos que rompa a hervir.

Trituramos nuestro caldo y lo colamos por un chino. El resto de los pimientos los salteamos y juntamos a nuestra crema.

Cortamos la langosta en pedazos que no superen los 2 cm por lado, salpimentamos y los cocemos en nuestra crema.

Espuma coco-kaffir

Los 100 ml de leche de coco restante, llevar a unos 75º con la lecitina, mezclamos bien con un brazo, colocamos la lima kaffir y dejamos reposar un par de horas tapado con un paño limpio, de esta manera inficionará. Luego, con el mismo brazo, batimos y vemos cómo la espuma que se forma es el aire que necesitamos para el plato.

 Chifles Plátano

Pelamos el plátano macho y hacemos lascas finas alargadas. Freimos en aceite no muy caliente, así conseguiremos buen color y sabor. Sacamos del aceite y dejamos sobre papel en una bandeja. Servimos en un plato sopero una vez la langosta esté cocida, que no se pase, porque la langosta es muy delicada. Ponemos por encima un poco de culantro picado y aceite de oliva. Colocamos un poco de nuestro aire de coco y un crujiente de plátano.

 

 

 

Cut the onions into thin julienne strips and poach in a pan over low heat. Cut the peppers into cubes of about 2 cm. Reserve half and add the other half with the onion. Let poach. Add the Sechuan pepper, the chopped cilantro, and the bay leaf to the sauce. Once everything is very well poached, add the croaker previously cut into cubes and let the fish cook. Add water to slightly cover what have in the pan and place about 400 ml. of coconut milk into the mixture. Wait it comes to a boil.

Crush our broth and strain it through a Chinese. Sauté the rest of the peppers and add to our cream.

Cut the lobster into pieces that do not exceed 2 cm per side, salt, and pepper, and cook them in our cream.

Coco-kaffir foam

Bring the remaining 100 ml of coconut milk to about 75º with the lecithin, mix well with one arm, place the kaffir lime and let it rest for a couple of hours covered with a clean cloth, in this way it will infect. Then, with the same arm, beat and see how the foam that forms is the air needed for the plate.

Banana Chifles

Peel the plantain and make thin elongated flakes. Fry in not very hot oil, so will get good color and flavor. Take out of the oil and leave on paper in a tray. Serve in a soup plate once the lobster is cooked, do not overdo it, because the lobster is very delicate. Top with a little chopped cilantro and olive oil. Put a bit of our coconut air and a banana crunch.
