Ingredientes

1 kg de atun (1 kilo of fresh tuna) Juan Carlos Prieto
1 kg yuca (kilo of fresh or frozen cassava) Prieto Moran Ludivina
2 cucharadas aceite (2 tablespoons oil)
2 tomates (2 chopped tomatoes) Frutas Angel y Jose
1 cebolla morada ( 1 onion, chopped)  Frutas Hermano Mate
1 cucharadita pimenton (1 teaspoon of non-hot chili pepper. You can use ground paprika) Prieto Moran Ludivina
2 cucharaditas comino (2 teaspoons ground cumin) Prieto Moran Ludivina
8 tazas de agua (8 cups of water)
5 ramas cilantro (5 sprigs of coriander or cilantro)
Sal al gusto (Salt)

Preparación

  1.  Preparamos un refrito con la cebolla, el tomate, el comino, el ají y la sal.
  2. Añadimos el agua y las ramitas de cilantro.
  3. Añadimos el atún cuando el agua empiece a hervir, cocinamos hasta que el atún esté listo, aproximadamente unos 15 minutos.
  4. Colamos el caldo donde se cocinó el agua y lo guardamos para cocinar la yuca.
  5. Separamos el atún en lonjas, guardamos para añadir más tarde.
  6. Hervimos el caldo de atún y añadimos las yucas. Cocinamos hasta que estén suaves.
  7. Sacamos las yucas y las cortamos en pedazos pequeños.
  8. Volvemos a poner las yucas picadas y las lonjas de atún en el caldo, rectificamos la sal y calentamos hasta que esté listo para servir. Para darle más sabor, también podemos preparar una porción adicional de refrito y licuarlo con un poco del caldo, e incorporar esta mezcla a la sopa.
  9. Para servir el encebollado de pescado ponemos una buena porción del curtido de cebolla y tomate, aliñado con juego de limón, cilantro, aceite y sal, encima de cada plato de sopa.

Notas: Podemos preparar variaciones del encebollado mixto con camarones y otros maris-cos. También se puede agregar una variedad de hierbas diferentes para preparar el caldo, pero el cilantro es el principal.

 

  1. Prepare a rehash with the onion, tomato, cumin, chili pepper, and salt.
  2. Add the water and the coriander sprigs.
  3. Add the tuna when the water starts to boil, cook until the tuna is ready, approximately 15 minutes.
  4. Strain the broth where the water was cooked and save it to cook the yucca.
  5. Separate the tuna into slices, save to add later.
  6. Boil the tuna broth and add the yuccas. Cook until soft.
  7. Take out the yuccas and cut them into small pieces.
  8. Return the chopped yuccas and the tuna slices in the broth, rectify the salt, and heat until ready to serve. To give it more flavor, prepare an additional portion of refrito and blend it with a little of the broth, and incorporate this mixture into the soup.
  9. To serve the fish onions put a good portion of the onion and tomato tanned, seasoned with lemon, coriander, oil, and salt, on top of each soup plate.

Notes: Prepare variations of the mixed onion with shrimp and other seafood. A variety of different herbs can also be added to make the broth, but coriander is the main one.
