Las empanadas de pino son una receta típica de Chile. El pino se elabora con carne de vacuno picada y se acompaña con sabrosos ingredientes como cebolla, pimienta negra, comino y orégano, para obtener un sabroso plato.

Ingredientes

Masa empanada (Empanada dough)
1 kilo de harina (1 kilogram of flour)
1 cucharada de sal (1 tablespoon of salt)
500 ml de agua hirviendo (500 ml of boiling water)
250 g de manteca de cerdo, caliente (250g lard, hot)
1 huevo, mezclado con un poco de agua fría para pincelar (1 egg, mixed with a little cold water for brushing)
Relleno empanada (Empanada filling)
5 cebollas grandes, picadas finas (5 large onions, finely chopped)
½ taza (120 ml) de aceite (½ cup (120 ml) oil)
1 kilo de posta negra de vacuno, picada (1 kilo of black beef post, minced)
¼ de cucharadita de pimienta negra en polvo ( ¼ teaspoon ground black pepper)
¼ de cucharadita de comino en polvo (¼ teaspoon ground cumin)
1 cucharada de orégano seco (1 tablespoon dried oregano)
1 cucharada de sal (1 tablespoon of salt)
2 dientes de ajo, picados (2 garlic cloves, minced)
1 cucharada de ají de color (tipo paprika) (1 tablespoon of colored chili pepper (paprika type))

15 aceitunas negras (de Azapa) (15 black olives (from Azapa))
4 huevos duros, en cuartos (4 hard-boiled eggs, quartered)
15 pasas rubias (15 blond raisins)

Preparación

  1. Primero preparar el pino (relleno)
  2. En una olla grande ponemos la cebolla picada, cubrimos con agua fría y cocinamos a fuego medio hasta que estén blandas. Retiramos del fuego, colamos y reservar. No estirar completamente, ya que deben quedar con un poco de agua.
  3. En otra olla calentamos el aceite a fuego medio, agregamos el resto de los ingredientes, excepto el ají de color (paprika). Cocinamos hasta que la carne esté dorada, y añadimos la paprika. Agregamos la cebolla reservada y llevar a hervir revolviendo 20 minutos más y retirar del fuego; dejar enfriar y refrigerar. El pino se debe preparar un día antes.
  4. Para preparar la masa de empanadas ponemos la harina sobre una superficie lisa en forma de volcán y agregamos al centro la sal, agua hirviendo y manteca. Con una cuchara o espátula de madera, revolvemos hasta integrar todos los ingredientes y la mezcla esté tibia. Luego, con la ayuda de las manos, amasamos hasta que la masa esté suave y elástica.
  5. Dividimos la masa en 15 porciones y pasamos el rodillo a cada uno hasta dejarla de 5 mm de grosor. Cortamos 15 círculos de 22 cm de diámetro y pincelamos los bordes de la masa con la mezcla de huevo. Ponemos al centro de cada unidad, 2 cucharadas de pino, aceitunas, huevos y pasas.
  6. Para cerrar las empanadas, doblamos el extremo de la masa en la mitad, sobre el relleno; luego, doblamos los bordes con los dedos hasta formar la empanada. Presionamos las puntas con un dedo y pincelamos la superficie con el resto de la mezcla de huevo nuevamente. Pinchamos el centro de las empanadas con palito de cóctel.
  7. Ponemos las empanadas en una bandeja de horno y dejamos hornear 20 minutos o hasta que estén doradas. Retirar y servir de inmediato.

  3. In another pot, heat the oil over medium heat, add the rest of the ingredients, except the colored chili (paprika). Cook until the meat is golden brown, then add the paprika. Add the reserved onion and bring to a boil stirring for 20 more minutes and remove from heat; let cool and refrigerate. The pine must be prepared a day before.
  4. To prepare the empanada dough, put the flour on a smooth surface, volcano-shaped flour, add the salt, boiling water and butter to the center. With a wooden spoon or spatula, stir until all the ingredients are integrated and the mixture is warm. Then, with the help of your hands, knead until the dough is smooth and elastic.
  5. Divide the dough into 15 portions and roll each one until it is 5 mm thick. Cut 15 circles of 22 cm in diameter and brush the edges of the dough with the egg mixture. Put in the center of each, 2 tablespoons of pine, olives, eggs and raisins.
  6. To close the empanadas, fold the end of the dough in half, over the filling; then fold the edges with your fingers to form the patty. Press the tips with a finger and brush the surface with the rest of the egg mixture again. Prick the center of the empanadas with a cocktail stick.
  7. Put the empanadas on a cookie sheet and bake for 20 minutes or until golden brown. Remove and serve immediately.
