Ingredientes

Los ingredientes del cebiche los podrá encontrar en el Mercado de Maravillas:

1 kilo de filetes de pescado fresco (1 kg fresh fish) Pescaderia Jaime
 2 choclos (elote) (2 corn (corn)) Productos Latinos Jazmin
 2 a 3 ajíes limo (puede usarse ½ rocoto picado según el gusto) (2 to 3 ajíes limo (can ½ rocoto minced)  Amazonas productos latinos
 20 limones (20 lemons) Frutas Ramon
 2 camotes grandes (2 large sweet potatoes) J. Castro
 1 cebolla roja grande o 2 medianas (1 large or 2 medium red onion)
 1 ½ cucharaditas de sal (1 ½ teaspoons of salt)
 ½ cucharadita de pimienta negra (½ teaspoon of black pepper) Alimentación Sana Alonso
 1 cucharadita de Ajínomoto (glutamato monosódico) (1 teaspoon Ajinomoto (monosodium glutamate))
 4 ramas de culantro (4 branches of coriander) Ay madre la fruta
 1 ½ cucharaditas de ajo molido (o según el gusto) (1 ½ teaspoons of ground garlic) Fruteria Jazmin
 6 hojas de lechuga hidropónica, crespa u orgánica (6 hydroponic, crepe or organic lettuce leaves) Juan Herrero

Preparación

  1. Primero se lavan bien los filetes de pescado y luego se procede a cortarlo en pequeños pedazos de alrededor de 2 cm en forma de cubo y se depositan en un recipiente de vidrio, de preferencia agregar cubos de hielo para mantenerlo fresco. Picar el ají limo o el rocoto en pedazos pequeños, retirando las pepitas blancas para que no pique mucho (según el gusto). Cortar en pedazos largos y delgados la cebolla, es muy importante, ya que debe ser tipo pluma. Para que la cebolla no tenga un sabor fuerte es recomendable depositarla en un recipiente de vidrio con agua fresca y echar 1 cucharada de azúcar blanca. Picar finamente las cuatro ramas de culantro, quitándole los tallos.
  2. Sancochar los choclos y los camotes (en microondas 3 minutos por cada unidad). Luego de hervidos se pelan los camotes y se cortan en pedazos medianos al igual que los choclos. Se cortan los limones por la mitad y se les quita las semillas. Luego los exprimimos en un recipiente de vidrio. Se debe evitar exprimir los limones al máximo, para que no salga el sumo amargo de la cáscara. Una vez que se tiene el jugo de limón listo, se mezcla con los ajos molidos, el Ajínomoto, la sal y la pimienta durante unos 20 segundos para que se integren todos los ingredientes.
  3. Se agrega el ají limo o rocoto y el pescado escurrido (sin el hielo) en el recipiente con el jugo de limón, luego la cebolla previamente enjuagada, para que no vaya a tener el sabor dulce del azúcar mientras se estuvo remojando, y por último el culantro. Una vez con todos los ingredientes en el recipiente, se mezclan bien usando una cuchara de acero (nunca de madera). Por último, servir en un plato con una hoja de lechuga, un trozo de camote, un trozo de choclo. Para acompañar el ceviche es costumbre servir un poco de cancha serrana (maíz tostado), o chifles (plátano frito en rodajas delgadas). Como bebida se puede acompañar con una cerveza helada o vaso de chicha morada.

 

 

  1. Cutting the onion into long and thin pieces is very important, as it must be a feather type. So that the onion does not have a strong flavor, it is advisable to place it in a glass container with fresh water and add 1 tablespoon of white sugar. Finely chop the four coriander branches, removing the stems.
  2. Parboil the corn and sweet potatoes (in the microwave for 3 minutes for each unit). After being boiled, the sweet potatoes are peeled and cut into medium pieces like the corn. The lemons are cut in half and the seeds are removed. Then we squeeze them into a glass container. Avoid squeezing the lemons to the fullest, so that the bitterness of the peel does not come out. Once the lemon juice is ready, it is mixed with the ground garlic, the Ajínomoto, the salt, and the pepper for about 20 seconds so that all the ingredients are integrated.
  3. Add the ají limo or rocoto and the drained fish (without the ice) in the container with the lemon juice, then the onion previously rinsed, so that it will not have the sweet taste of the sugar while it was soaking, and finally coriander. Once all the ingredients are in the container, mix well using a steel spoon (never wooden). Finally, serve on a plate with a lettuce leaf, a piece of sweet potato, a piece of corn. To accompany the ceviche it is customary to serve a bit of cancha serrana (toasted corn), or chifles (fried banana in thin slices). As a drink, it can be accompanied by an ice-cold beer or a glass of chicha morada.
