Ingredientes

  • 1500g de falda de ternera con poca grasa
  • 1 bouquet garni compuesto por puerro, zanahoria, tomillo, romero y laurel
  • 30cl de vino tinto
  • 2 cebolla medianas
  • 4 dientes de ajo machacados
  • 1 ramillete de apio verde
  • 20g de tomate concentrado
  • 1 pizca de orégano
  • 10cl de aceite de oliva
  • 2 o 3 ajíes criollos rojos picados
  • 6 tomates muy rojo sin piel
  • 4 hojas de culantro
  • 10cl de salsa de soja
  • Sal fina
  • 12g de Pimienta negra molida

 

  • 1500g low-fat flank steak
  • 1 bouquet of garni composed of leek, carrot, thyme, rosemary and bay leaf
  • 30cl of red wine
  • 2 medium onions
  • 4 garlic cloves, crushed
  • 1 bunch of green celery
  • 20g tomato concentrate
  • 1 pinch of oregano
  • 10cl of olive oil
  • 2 or 3 red Creole peppers, chopped
  • 6 very red tomatoes without skin
  • 4 coriander leaves
  • 10cl of soy sauce
  • Fine salt
  • 12g ground black pepper

Preparación

Ponemos a hervir la falda durante una hora y media a fuego suave con el bouquet garni, sal y pimienta negra molida. Pasado ese tiempo comprobamos que la carne esté tierna. Apartamos del fuego y dejamos enfriar. Reservamos parte del caldo. Deshilachamos o cortamos en dados, y reservamos.

En una sartén, ponemos la cucharada de aceite y agregamos la cebolla, los ajos, el apio picado, los ajíes, tomate picado y sofreímos con la pasta de tomate.

Agregamos la carne deshilachada, el orégano, el caldo anterior, la salsa de soja, el vino y las hojas de culantro. Cocinamos a fuego lento durante una hora aproximadamente. Rectificamos el sazonamiento.

 

Carimañola:

  • 1 1/2 Libras de yuca pelada, cocida o molida
  • Aceite vegetal
  • Sal al gusto

Amasamos bien la yuca con sal y formamos porciones del tamaño de un huevo. Presionamos en el centro de cada una con el dedo pulgar y freímos en aceite caliente hasta que doren. Escurrimos, después introducimos el relleno de ropa vieja en el hueco hecho, dejamos caer un poco de salsa y acompañamos con alioli de perejil.

Add the shredded meat, the oregano, the previous broth, the soy sauce, the wine, and the coriander leaves. Cook over low heat for about an hour. Rectify the seasoning.

Carimañola:

  • 1 1/2 pounds of cassava peeled, cooked, or ground
  • Vegetable oil
  • Salt to taste

Knead the yucca well with salt and form portions the size of an egg. Press in the center of each one with your thumb and fry in hot oil until golden brown. Drain, then introduce the stuffing of old clothes in the hole made, drop a little sauce, and accompany with parsley aioli.
