Ingredientes

Los ingredientes de esta receta se pueden comprar en el Mercado de Moratalaz:

400 g. de col gallega (también valdría berza). (400 g. Galician cabbage (it would also be worth cabbage). 

Suelen utilizar una variedad de la col gallega, couve portuguesa. (They usually use a variety of Galician cabbage, Portuguese couve.)

500 g. patatas gallegas o batata portuguesa (500 g. Galician potatoes or Portuguese sweet potato) Frutería Frasquito
200 g. chorizo ahumado (200 g. smoked chorizo) Carniceria Lucas
1 cebolla (1 onion) Frutas y verduras Mafemi
2 dientes de ajo (2 cloves of garlic) Frutas y verduras number one
Agua (Water)
Sal (Salt)
Aceite de oliva virgen extra (Extra virgin olive oil)

Preparación

  1. Retirar las hojas de la berza (col gallega) y lavarlas. Colocar unas encima de otras, enrollarlas y cortar en tiras finas. Reservar.
  2. Cortar la cebolla y el ajo en “brunoise”. En una cazuela (donde se hará el caldo), verter una lámina de aceite de oliva virgen extra y sofreír un par de minutos.
  3. Pelar las patatas y añadirlas en dados grandes. Incorporar agua tibia, hasta tapar por completo. Salar al gusto. Tapar la olla y cocinar durante 25 minutos (hasta que las patatas estén tiernas).
  4. Cortar el chorizo en rodajas y saltear un par de minutos en una sartén
  5. Pasado el tiempo de cocinado, triturar las patatas y hortalizas con la batidora. Resultará una crema fina y homogénea Probar de sal y rectificar si es necesario.
  6. Añadir ahora la col rizada y el chorizo (desgrasado). Mezclar. Volvemos a tapar y cocinar otros 5 minutos más.
  7. Servir bien caliente en la mesa, acompañado de un buen pan artesano. Cómo dirían en Portugal: está pronta a servir, está listo para servir.

 

  1. Remove the leaves of the cabbage (Galician cabbage) and wash them. Place them on top of each other, roll them up, and cut them into thin strips. Reserve.
  2. Cut the onion and garlic into «brunoise». In a saucepan (where the broth will be made), pour a sheet of extra virgin olive oil and fry for a couple of minutes.
  3. Peel the potatoes and add them in large cubes. Add warm water until completely covered. Salt. Cover the pot and cook for 25 minutes (until the potatoes are tender).
  4. Cut the chorizo into slices and sauté for a couple of minutes in a pan.
  5. After the cooking time, mash the potatoes and vegetables with the mixer. It will be a fine and homogeneous cream. Taste salt and rectify if necessary.
  6. Now add the kale and the chorizo (defatted). Mix. Cover again and cook for another 5 minutes.
  7. We serve hot at the table, accompanied by good artisan bread. How they would say in Portugal, «está pronta a servir, it is ready to serve».
