Ecuador

Ecuador es un país formado por 24 provincias en las que viven más de 17 millones de habitantes. Sus fronteras terrestres limitan con Colombia y Perú y su costa está bañada por el océano Pacífico. Su capital, Quito, es atravesada por el Ecuador (la línea imaginaria que divide al planeta entre el hemisferio norte y sur). Dentro del país existen geográficamente cuatro zonas bien diferenciadas: la Amazonía, los Andes, la costa del Pacífico y las Islas Galápagos (estas últimas Patrimonio Natural y Biológico de la Humanidad desde 1978).

Su gastronomía está muy marcada por los alimentos autóctonos de cada zona. En líneas generales destacan el maíz, el cacao, la quinua, el banano y la papa (de la que actualmente se producen alrededor de 350 variedades nativas según el Mapa Gastronómico de Ecuador).

En cuanto a su gastronomía líquida es imprescindible mencionar el agua de coco, la chicha y el café, pues Ecuador posee casi todas las variedades de arábica y robusta.

Its capital, Quito, is crossed by Ecuador, the imaginary geographical line that divides the planet between the northern and southern hemispheres. Within the country, there are geographically four well-differentiated areas: the Amazon, the Andes, the Pacific coast, and the Galapagos Islands, which have been Natural and Biological Heritage of Humanity since 1978.

Its gastronomy is very marked by the geographical characteristics and the indigenous foods of each area. In general, corn, cocoa, quinoa, banana, and Ecuadorian potato stand out, of which around 350 varieties of native potato are currently produced, according to the Gastronomic Map of Ecuador.

As for its liquid gastronomy, it is essential to mention coconut water, chicha, and coffee. Ecuador has almost all varieties of Arabica and Robusta coffee. Different ecosystems allow it to occur in all four regions.
